Change routes, quantities, BOM, after confirm production

In our industry lot of bad things happen.

We produce cardboard,

I want to be able to:
- Decrease the stock for raw materials after production start
(we have small quantities ordered, and we need to keep track of the moves imediatly (I understood that that was the behaviour of ver 5.0))
- change the bom after confirm production
(we do produce at urgent orders from one day to another so when the client orders yesterday, we confirm and try to buy the raw material, but then andother raw material is send by the supplier, with similar proprieties, we need to change the BOM to use that material)
- change quantities even after starting production
( we have this situation:
we order 1000 pieces of cardboard, but really nobody count them exactly.
when thos 1000 pieces are put into our machine, that machine counts them exactly and there we have 1010 pieces.
we produce 1010 pieces. but have no way of updating this in openerp)
- produce without BOM
(we do have similar products as raw material for example a board of 1000x2000 can be cutted in two and then I have 2 x(1000x1000) pieces. This we do now with defining a BOM for the 1000x1000 board, but that is only this one time. And then we would end up in having a lot of unused BOM's)
