Converting physical machines to virtual machines

We need a way to convert an existing, physical machine to a virtual machine on a different host.
Should we go the virt-p2v way (using a special iso and do it offline) or the vmware way (using an agent designed for each OS to migrate the system while it's running)? What are the use cases?
